Ingredients for the Pepper Sauce:
Red peppers 2
Olive oil 1 ½ tablespoons
Garlic clove 1 (crushed)
Shallot 1 (chopped)
Vegetable stock 85 ml
Sugar ½ teaspoon (optional)

Recipe:

Preheat the oven to 200 degrees. Place the peppers on a baking tray and roast for 45 minutes until their skin is charred.
Remove the peppers from the oven and place them in a sealed plastic bag so that they “sweat,” making the skin easy to remove.
Once the peppers are cool enough, peel them with your fingers, cut them, and remove the seeds. Then chop them.
Heat olive oil in a pan, and when hot, add the garlic and shallot, frying for a few minutes.
Add the chopped peppers to the pan and continue frying for a few minutes, stirring so that all ingredients combine.
Add the vegetable stock, bring everything to a boil, and let the liquid evaporate slightly. Transfer the contents of the pan to a blender and blend until smooth. Season to taste depending on the ripeness of the peppers, you may not need to add sugar at all, but if they are slightly bitter, return the mixture to the pan, add sugar, and heat slightly to dissolve it.
Serve the sauce at room temperature.

Preheat the oven to 180 degrees and line a baking tray with parchment paper.
Cut the spicy peppers in half and completely remove the seeds and white membranes with a spoon or similar tool. In a medium bowl, mix together the cheeses, olives, lemon juice, lemon zest, salt, and pepper.

Ingredients for Couscous Stuffed Peppers:
Large red pepper 1 (halved and without seeds leave the stem)
Yellow pepper 1 (halved and without seeds leave the stem)
Couscous 85 grams
Boiling water 125 ml
Pine nuts 25 grams
Black olives a handful (pitted and chopped)
Feta cheese 50 grams (crumbled)
Semi-dried tomatoes or a handful of cherry tomatoes 50 grams (quartered)
Basil 2 tablespoons (chopped)

Recipe :
Preheat the oven to 200 degrees.
Place the peppers on a plate and microwave for 5 minutes so that they soften.
Then place them on a baking tray with the cut side facing up.
While the peppers are in the microwave, place the couscous in a bowl and cover it with boiling water. Stir, cover the bowl, and set aside for 10 minutes.
Stir the couscous again to break it up and add the pine nuts, olives, feta cheese, tomatoes, and basil. Fill each pepper half with the couscous mixture and bake in the oven for 10 minutes.
